I used to be stuck in the most boring cooking rut...
Every week, it was the same routine. Season some chicken, throw it in the oven for 30 minutes, or toss everything in the slow cooker and hope for the best.
The food was fine but that's all it was...fine.
One night, I was standing in my kitchen trying a new recipe called, Tuscan Salmon. Nothing fancy, just pan-fry the salmon, then add some aromatics, cream, and spinach to the same pan.
I followed the steps without thinking much about it. I didn't even know I was making something called a "pan sauce."
Then I tasted it.
Everything about my food was just... better. It was savory, luxurious, delicious and the best part...not that hard.
The flavor. The richness. The way it made a simple piece of salmon taste like something from a $40 restaurant.
I had this total epiphany: This is what's been missing from my cooking.
Now? I use pan sauces 4-5 nights a week. Same proteins I always bought. Completely different meals every time.
